
JOURNAL ENTRY
This month I struggled to write something. I had a lot of occurrences happen but nothing I wanted to share exactly. I thought this month is a good time for me to share a piece I wrote a long time ago. It may be exactly what some women needed to hear this month.
Somebody that’s not for everybody.
Be prepared for a lot of men never being able to see the true beauty in you. Never being able to understand who you really are and all that you could be. There is a high degree of misunderstanding in who you are to others when you are a woman of a different caliber. A woman that is internally and externally destined for greatness. The intimidation of others can be disguised in multiple forms and may not be revealed til long after when only self reflection and realization/s of yourself come about. A woman who is living unconsciously authentic can deter and trigger a lot of men naturally. This is because you bring into the relationship a sense of responsibility that will virtually force a mirror into the face of the lover you have chosen. This mirror will reflect to them constantly. This mirror you hold to your own self daily. That you have become so accustomed to seeing because you are not afraid of yourself nor your shadows, somewhat peacefully allowing you to carry your burdens, flaws and shadows with pride all while working on them courageously. The mirror is an anchor to keep you focused on the forward vision of the woman you want to become. The mirror for your lover reveals everything they may want to avoid. When you naturally trigger or highlight these shadows to your lover, you will find time and time again, your lover will reveal their ugly side in order to escape or flee what they are being forced to face within the mirror. Your dating experiences will not be for the faint hearted. But nor yourself will be faint in the slightest as your journey so far was built by bravery and resilience. It is a struggle of time and patience that can leave you doubting your own actions, self worth or competence to hold a strong relationship, but as everything in life, as much as your lovers disguise themselves from you, the blessings will also disguise themselves until you are ready and open for the blessing to be revealed.

This looks far from appetising however, it will now be my new Spinneys Go to. I made a basic salad from their salad bar, added S&P, olive oil and white vinegaer. Bought half a roast chicken, shredded it and added it on top. Extremely filling, high protein and WAY healthier than a mix of their premade salads.

Fresh Lavash bread
Bec’s Sunday Roasted Lamb.
One of the easiest and hearty dishes that I love to make at a dinner party or a get together.
For anyone new to cooking. I want to point out the only real difference between someone who calls themselves a good cook vs some one who doesn’t is pure confidence. And where exactly does confidence build from? Knowledge. The more you know the more confidence you gain. And this goes for any aspect of your life. Of course there are some things that require practice, (cutting & cooking techniques, quality control in your produce, understanding flavours etc which I know well will practice over time) some things are very very simple. Like having a damn good pot or time. Both of which even the most amateur cook has access to. This is a slow and low recipe that is a one pot pan procedure so it’s virtually fool proof if given the right time and pot of course.
Ingredient required:
Leg of Lamb roughly 2.5 kg
handful of Rosemary
Whole Garlic
1x can of Anchovies in Olive Oil (used as a seasoning)
3-4 stalks of Celery roughly chopped
3-4 carrots roughly chopped
3 quartered onions
Handful of cherry tomatoes
1 litre Vegetable Stock
Equipment required:
Heavy based tray/pan (I usually use my Le Creuset pan)
Aluminium
Baking paper
Preheat your oven to 180*c (fan forced) 200*c (non fan forced)
Place your lamb leg in the centre of the pan (fat facing up).
Chop all the veggies (veggies can vary to what you prefer, I tend to use what I have available in my fridge, sometimes I like potatoes) roughly the same size and scatter then around the lamb filling the base of the pan.
Make deep cuts inside the lamb leg (enough to insert a full garlic clove rosemary twigs and one anchovy (see image above for ref.)).
Wrap your garlic clove and rosemary twig with an anchovy and insert in incisions. Repeat process and fill all incisions (add remainder of anchovies to the vegetables)
Rub Salt + Pepper all over the lamb, drizzle the oil from the anchovy tin over the whole dish
Fill the tray/pan with your vegetable stock until the lamb is halfway submerged (this will ensure the lamb stays tender and doesn’t dry out while the top fatty layer crisps to perfection throughout the cooking process).
Now, depending on what pan you have, (If you have an encased lid like the Le Creuset pot that I have used, This step is not necessary, just pop the lid on top before placing it in the oven.) Top your lamb with some baking paper, followed by aluminium and tightly seal the tray around all the edges to ensure no air can escape. We want to ensure the lamb is securely insulated to keep moisture inside and cooking time to a minimum.
Your oven should be preheated by now, You may need help placing the tray inside the oven, it can be quite heavy so be careful as the tray is filled with liquid.
Once your lamb is in the oven, let it cook undisturbed for 3 hours.
After three hours, gently remove the lamb from the oven and take a moment to assess its progress. As you lift the tray, the aroma should envelop you, hinting at the tender feast to come. Carefully slide the lamb leg from the tray; it should yield effortlessly, separating from the bone with a graceful ease. This delicate detachment is a testament to the seal you created earlier, ensuring that all the flavors and juices have melded perfectly. If it comes away smoothly, you can be confident that your efforts have paid off, resulting in a succulent and mouthwatering ALMOST finished dish. If you require more cooking time. Just reseal the tray and let it cook for another 3- mins and retest.
Once you’re satisfied with the lamb’s tender perfection, switch the setting to broil, lower temperature to 160*c (fan forced) or 180*c (non fan forced). Remove the lid, along with any aluminium or baking paper, and let the lamb bask under the heat for about 10 minutes. This is your chance to elevate the dish: as it broils, the layer of lamb fat will begin to render and crisp up, while the garlic cloves caramelize, releasing their rich, savoury essence. This final blast of heat not only enhances the texture but also adds a deep, complex flavour, transforming your already succulent lamb into a mouthwatering masterpiece!

While your lamb rests, it’s the perfect moment to focus on your favourite side dishes. I love preparing a fluffy couscous, a vibrant salsa verde, and a zesty lemon yogurt. To infuse the couscous with flavour and depth, I add the rich liquid left in my tray, so no flavour goes to waste. Once the couscous is ready, I use it as a bed for the lamb, top it off with the salsa verde; the bright acidity of the vinegar cuts through the succulent fat, harmonising the flavours beautifully. This combination transforms the dish into a symphony of taste and texture, elevating your meal to new heights. (This meal is even better the next few days as the flavours combine over time. It serves for a great meal prep option).

My thoughts:
This isn’t the first time I have heard of this book. My brother actually introduced me to the Author many years ago as he studied it in High school (The Kite Runner).The middle east and their way of life was never something I was really exposed to until I moved to Dubai. My dad spent many years working in the Middle East & North Africa on oil rigs in Kuwait, Algeria, Saudi, Iran, Afghanistan, UAE etc. He would often bring back gold as gifts for my mother and I. Sometimes perfume and even desert roses. It was all I knew of the middle east until I relocated to Dubai. Here I began to educate myself on the culture, religion and traditions. I gained beautiful friends with beautiful stories and backgrounds that truly fascinated me, that made me realise that there was so much rich history here that I was eager to learn about. I think I picked a good first book showcasing the lives of the suppressed women in Afghanistan. To be truly honest, if it wasn’t for my new life here in Dubai being exposed to a whole new world, I wouldn’t have been so attached to the characters, stories, feelings of the two women in this book. I’m sure every woman, can relate to both characters at some point throughout the book. Oppression, Resilience, Sacrifice, Courage, Hope, Defiance, loneliness. All of which us women can relate to. These are just some of the qualities both Mariam and Laila felt deeply throughout the book. The strong endurance these two women showed, is resembled in every woman. The “thousand splendid suns” symbolic of resilience, as the sun rises each day, it is metaphorically a source of hope and renewal despite the ongoing darkness and hardship in their lives, they continue to shine as the sun does everyday. It is also celebration of their inner beauty. The '“splendid suns” metaphorically represent the multifaceted lives and virtues of all the women in the story. Despite being subjected to oppression and pain, they possess an inner radiance and capacity for love, courage and transformation. How to love yourself by Teal Swan
My thoughts:
I have known about Teal Swan and her teachings for years now, and it wasn’t until my therapist had brought her up in last month’s session. In my previous blog you’ll see in my youtube history of videos I watched throughout the month, there is a video my therapist advised me to watch. I felt the need to learn more about her teachings so I decided to ecided to read one of her books. The first half of this book was the story of how Teal Swan became to be the strong, spiritual leader that thousands of women look up to for guidance and advice today. Her traumatic childhood experiences, her spiritual and intuitive gifts carried her through a journey of self discovery and self love. She has endured such trauma that only some could experience in their nightmares. I can’t even imagine the work she would have had to delve into, to help her body and mind heal from the world she was thrown into that unknowingly was going to shape who she was for a very long time. As you immerse yourself in Teal Swan’s journey, you’ll be captivated by her life story and the profound insights she shares. In the second part of the book, she unveils the powerful tools that have guided her back to her true self, enabling her to practice authentic self-love and cultivate a mindset of abundance. With clarity and compassion, she provides step-by-step exercises that empower readers to forge their own paths of self-discovery. These practical strategies invite you to explore your inner landscape, helping you uncover your true essence and embrace a life filled with purpose and fulfilment. Some self help tools were good reminders for me, others I already practice. Her way of thinking I can relate to and see the world as she does, probably from my own self help work I have done. I highly recommend reading if you are only beginning your self love journey as the book will help guide you and show you how to REALLY love yourself.
